Dilansir dari buku &#8220;200 Resep Pilihan Masakan &amp; Jajanan Khas Daerah&#8221; (2015) oleh Ide Masak terbitan PT Gramedia Pustaka Utama.<\/p>\n<p><strong>Resep pecel punten khas Blitar<\/strong><\/p>\n<p><strong> Bahan<\/strong><\/p>\n<ul>\n<li>200 ml santan dari 1\/2 butir kelapa<\/li>\n<li>1 lembar daun salam<\/li>\n<li>1 cm lengkuas, memarkan<\/li>\n<li>250 gram beras, cuci bersih<\/li>\n<li>1\/2 sdt garam<\/li>\n<\/ul>\n<p><strong>Bahan pecel<\/strong><\/p>\n<ul>\n<li>1 ikat daun singkong, siangi, rebus, peras, iris<\/li>\n<li>1 ikat daun pepaya, rebus, peras, iris<\/li>\n<li>100 gram taoge, siangi, seduh<\/li>\n<li>100 gram kacang panjang, potong 3 cm, rebus sebentar<\/li>\n<li>Lalapan seperti kemangi, petai cina, mentimun<\/li>\n<li>Rempeyek kacang atau teri<\/li>\n<li>Lauk seperti tempe atau empal daging goreng<\/li>\n<\/ul>\n<p><strong>Bumbu halus <\/strong><\/p>\n<ul>\n<li>250 gram kacang tanah<\/li>\n<li>1 cm kencur<\/li>\n<li>3 siung bawang putih<\/li>\n<li>5 buah cabai merah, buang isinya<\/li>\n<li>5 buah cabai rawit<\/li>\n<li>2 lembar daun jeruk purut<\/li>\n<li>100 gram gula merah<\/li>\n<li>25 gram gula pasir<\/li>\n<li>1\/2 sdt garam<\/li>\n<li>1 sdm air asam<\/li>\n<\/ul>\n<p><strong>Cara membuat pecel punten khas Blitar Punten:<\/strong><\/p>\n<ol>\n<li>Rebus santan, daun salam, dan lengkuas hingga mendidih. Masukkan beras dan masak hingga santan terserap sambil sesekali diaduk. Angkat dan biarkan selama 10 menit. Kukus hingga matang dan angkat. Tumbuk selagi masih panas hingga halus. Bungkus seperti lontong dengan daun pisang, padatkan. Sisihkan.<\/li>\n<li>Bumbu pecel: Sangrai kacang tanah tanpa minyak sampai matang atau kecokelatan. Buang kulit airnya, giling kasar. Sisihkan dan tumbuk halus kencur, bawang putih, cabai merah, cabai rawit, dan daun jeruk purut. Sangrai sebentar hingga wangi.<\/li>\n<li>Angkat dan campur dengan kacang, gula merah, gula pasir, garam, dan air asam. Aduk hingga merata. Potong-potong punten dan atur di atas piring.
