Jenis olahan ikan dengan bumbu kental ini diberi nama &#8216;Palapa Sampan&#8217;. Kini bisa dinikmati masyarakat umum.<\/p>\n<p>Kuliner ini termasuk baru bagi warga Banyuwangi. Namun bagi warga Kelurahan Kampung Mandar, Kecamatan Banyuwangi, masakan ini sudah kerap kali dimasak dan disantap bersama. Maklum saja, daerah paling Timur kota Banyuwangi ini kebanyakan adalah nelayan yang mencari ikan di Selat Bali dan perairan sekitarnya.<\/p>\n<p>&#8220;Ini memang masakan khas nelayan\u00a0Banyuwangi. Kita hanya membawa bumbu dan masaknya diatas sampan (kapal). Sementara bahan ikan ya saat dapat memancing atau menjaring di lautan,&#8221; ujar Bunawi (60) salah satu nelayan Kampung Mandar kepada detikfood, Senin (27\/7\/2020).<\/p>\n<p>Bunawi mengaku, nelayan di Banyuwangi saat melaut bisa sampai berhari-hari. Oleh karena itu, mereka hanya membawa nasi dan bumbu. Sementara ikan, diambil dari sebagian hasil tangkapan.<\/p>\n<p>Untuk memasak Palapa Sampan, kata Bunawi, nelayan menyiapkan berbagai bumbu. Diantaranya, jahe, bawang merah, bawang putih, cabe besar dan kecil serta daun jeruk.<\/p>\n<p>&#8220;Ada penyedap rasa, garam dan gula sedikit,&#8221; tambahnya.<\/p>\n<p>Bumbu untuk masakan palapa sampan ini harus banyak. Bumbu yang sudah dihaluskan kemudian di sangrai sampai harum kemudian ditambah air. Baru setelah itu, ikan yang sudah dipotong dimasukkan ke dalam bumbu.<\/p>\n<p>&#8220;Kuahnya jangan sampai banyak. Dibuat kental dan warna merah dari bumbu cabe dan bawang merah itu. Masakan ini segar tidak menggunakan santan,&#8221; tambahnya.<\/p>\n<p>Saat ini, kata pria yang biasa dipanggil Pak Ambon ini, palapa sampan sedang naik daun. Dirinya memperkenalkan palapa sampan di warungnya saat pembukaan kawasan Pondok Trawang di Kelurahan Kampung Mandar, perbatasan dengan Pantai Marina Boom Banyuwangi.<\/p>\n<p>Karena baru bagi masyarakat, banyak yang penasaran mencobanya. Untuk pilihan ikan pun bermacam-macam. Mulai putihan, kelang, hingga kerapu.<\/p>\n<p>&#8220;Per hari bisa sampai 15 porsi lebih. Beda dengan ikan bakar yang sudah umum. Sementara untuk sajian ini bisa dinikmati menggunakan bermacam ikan.
