Masukkan iga dan Bumbu Halus.<\/li>\n<li>Tambahkan daun salam, lengkuas, serai dan gula Jawa.<\/li>\n<li>Masak dengan api sedang hingga bumbu meresap, kuah susut dan daging iga empuk\/lembut.<\/li>\n<li>Angkat daging iga dan tiriskan hingga dingin.<\/li>\n<li>Panaskan minyak secukupnya lalu goreng potongan iga sapi hingga kecokelatan dan agak kering. Angkat dan tiriskan.<\/li>\n<li>Sambal: Goreng bawang merah, bawang putih, cabe dan tomat dalam sedikit minyak hingga layu. Angkat dan tiriskan.<\/li>\n<li>Haluskan dengan cobek bersama gula dan garam.<\/li>\n<li>Taruh iga sapi di atas sambal dna tekan dengan ulekan hingga agak pipih.<\/li>\n<li>Sajikan dengan kucuran air jeruk nipis dan lalapan segar.<\/li>\n<\/ul>\n<p><strong>Tips:<\/strong><\/p>\n<ol>\n<li>Untuk iga penyet, sebaiknya gunakan iga sapi yang panjang tulangnya dan tebal dagingnya. Mintalah tukang daging memotong 12 cm.<\/li>\n<li>Saat merebus iga bersama bumbunya pastikan bumbu terserap dan daging iga empuk.<\/li>\n<li>Goreng iga asal bagian luarnya agak kering.
